<b>Tasting Notes<br /><br /></b>Spiced black plum aromas intermixed with caramel cherry flavors are generously displayed in our 2005 Cabernet Sauvignon. On the palate, subtle oak nuances and earthy currant characters combine to present a richly textured tapestry reflective of its Napa Valley roots.<br /><br /><b>Vineyards<br /></b><ul>
<li>The growing season was defined by periods of above average temperatures early on and cooler temperatures during maturation.</li>
<li>2005 was a bountiful harvest, creating aromatic and flavorful wines due to the extremely long growing and maturity seasons.</li>
<li>The primary source of this wine is our Tall Trees Vineyard in Yountville. Planted in 1998, these vines are just beginning to hit full stride.</li>
<li>The Bordeaux classical blending varietals of Malbec, Merlot, and Cabernet Franc are also grown at Tall Trees Vineyard and integrated into this wine.<br /></li>
</ul>
<b>Winemaking<br /></b><ul>
<li>Napa Cabernet Sauvignon grapes were harvested at optimal maturity. Thirty percent whole berries were introduced into the fermentors to help preserve, ripe fruit flavors, and minimize aggressive tannin extraction.</li>
<li>Gentle pumpovers and rack & returns extraction techniques were employed over an eight-day fermentation to enhance color and flavor extraction.</li>
<li>Secondary fermentations were completed and barrel aging lasted for 24 months in 60% French and 40% American oak barrels.</li>
<li>Regular quarterly rackings gracefully age the wines while gradually clarifying them. Minimal fining and filtration helped maintain the integral character of the vineyards.<br /></li>
